Best Cauliflower Pizza

This Cauliflower Pizza is a must in our home. This recipe makes the menu at least two or three times a month. Little Brynn Loves it and claims it as one of her favorite meals. She loves it even more when i put spinach on it as well. This recipes it so versatile we use it for every flavor of pizza we eat, Spinach Veggie, BBQ Chicken, Pulled Pork, Garlic Cheese sticks and a slew of other. Pizza is always a feature meal here. The Cauliflower crust is so fast and easy to make, not to mention it is much healthier. This crust is still crisp and chewy. so much flavor. Cauliflower is such an amazing vegetable. So many uses!

So I take 1 Large head of Cauliflower and Chop it in to pieces and put it in the food processor and chop in to tiny bits.

then pour it in to a bowl and microwave it for 7 mins.

let it cool on a clean kitchen towel for a few mins then squeeze out the excess juice. i get about some wheres between 1- 1 1/2 cups of juice.

them mix it up with an egg and 2 cups of grated light mozzarella cheese.

press into a pan lined with parchment paper (parchment is important!) shape into a pizza shape. Kinda press the edges up so it looks like a crust
bake at 425 F for about 20 minutes or golden brown in color.

take out of oven, top with whatever toppings you like. we used turkey pepperoni and cheese with a homemade pizza sauce I make based on this recipe from bake again for about 15 mins or until bubbly.

The Best Cauliflower Pizza Crust.


1 Large head of Cauliflower

2 cups of Shredded Mozzarella Cheese

2 eggs

Food Processor

2 Mixing Bowls

Parchment Paper

Pizza Pan


Chop washed cauliflower in to small pieces, then place in food processor and blitz until its about the size of rice grains.

Put cauliflower in a bowl and microwave for 7 mins

Dump out on to dish towel and let cool for a bit then wrap in dish towel and squeeze out excess juice i get about a cup to a cup and a half per head.

In a larger bowl mix cauliflower with eggs and cheese. the press into pizza shape on a pan lined with parchment paper.

Bake in oven for about 20 minutes at 425F or until brown and crispy.

Take out and top with whatever pizza toppings you like then bake again until cheese is bubbly and brown.

  1. I love the cauliflower pizza crust. I like to add some fresh spinach as I am ricing it and then I add a few spices when I mix it up. I add a little fennel, pizza seasoning, garlic powder and onion powder and salt and pepper. And if I have it I also add a bit of nutritional yeast. It just jazzes the crust up a bit!! Thank you for the recipe. I also like to use these small crusts like a tortilla. Yummy!!

  2. Do you have to use a microwave to cook the cauliflower? It is documented that microwaving food destroys it’s nutrition.

  3. This is a great recipe! The crust is a nice bread-like texture and crunchy around the edges. I imagine if you use one of the pans with the holes in the bottom you can get it more crispy (I plan on trying this next time). I made buffalo chicken bleu cheese pizza on this crust and it was absolutely amazing! Love this recipe.

    • So sorry to hear this! You have to make sure you squeeze as much moisture out of the cauliflower as possible or it will stick. I get about 1 cup to 1 1/2 cups of juice out of the cauliflower when I squeeze it.

  4. AMAZING RECIPE! We could barely tell the difference between this and real crust. We did make the mistake(?) of putting wayyyy too much cheese on top without thinking about the 2 cups of cheese in the crust…Oops!

    I’m about to put my second crust in the oven, but I noticed there’s a discrepancy between the recipe at the bottom and the “walkthrough” up above – the text above mentions using 1 egg and the bottom recipe asks for 2.

    I *THINK* the last time I tried it, I only used one egg…but this time, I used two…Will see how it turns out.

    Which is the intended amount?

  5. Boil the cauliflower if you’re worried about microwaving. Still no proof it causes any problems with the food but to each their own.
