Mexican style food always has a special place in my heart. This recipe for skinny chicken tacos is a delicious, healthy meal perfect for busy weeknights. I used the shredded chicken from my Easy Chicken Fajitas recipe without the onions and peppers (frozen after I made them and taken out of freezer for this recipe). Taco night is one of my favorite easy weeknight meals to make. Every single taco is customization. With Summer coming to an end soon, I am testing out some new back to school easy week night recipes lately, hoping to be better organized this year. These Skinny Chicken Tacos where a huge hit in our house, 20 minutes and the whole meal was on the table.
Skinny Chicken Tacos with Sweet and Spicy Sauce
Preheat a large skillet over a medium-high heat. Sauté chicken, honey, lime juice and seasonings for 5-8 minutes or until the chicken is heated through. add a tbsp of water if necessary to keep from burning
For the Spicy Sauce: Mix Greek yogurt, lime juice and sweet chili sauce together in a small bowl and set aside.
Prep your Toppings: Grate cheese, slice veggies.. etc. Get ready to enjoy your tacos
Arrange chicken, veggies, salsa, and guacamole on a tortilla. drizzle the sweet and spicy sauce over each taco and enjoy!
