Preheat oven to 425F. Line a large baking sheet with parchment paper.
Mix together the ingredients for pesto mixture in a small bowl.
In a large Ziplock bag, place chicken pieces and half of the pesto mixture. toss chicken until well coated.
In another Large ziplock bag place all the veggies and the other half of the pesto mixture
Dump both bags onto the lined sheet pan. spread evenly into a single layer.
Bake in oven at 425 for 20 minutes then take out of the oven and sprinkle the Parmesan cheese over the veggies and the chicken then place bake in the oven for 5-8 minutes until cheese is melted and the chicken is cooked through.
