Also Known as emergency – Oh my gosh my daughter needs treats for her class’s Valentines’ day party and I have 3 hours and no time to go to the grocery store – Cake pops. I know, sigh, I really seem to be lacking in the organizational department this week, but I did find the French Valentines so I’m 1-1 as a mom this week. Its been a crazy busy week though so I feel like I need to cut myself some slack, After all I did accomplish the cake pop last minute the night before her class party after putting her to bed But these super fast and unreal simple cake pops turned out so amazing and they are so delicious. so hag on to this recipe… you will thank me later.
Little Debbie’s Oatmeal Cream Pies are perfect for cake pops. They are soft and delicious and have the prefect cookie to cream ratio for cake pops. The whole process only took about 1 hour. So they are relatively quick to whip up on a last minute assignment for almost any occasion. Oatmeal Creme Pie Cake Pops Are Amazing and Fast and almost anyone will love them. not to mention they look so cute and who doesn’t love cake pops.
A Few Tips
Do not freeze before coating with chocolate – the chocolate will not set properly and crack or melt when it come up to room temp.
Use a cookie scoop to achieve uniformity – this will make it easier to make sure all the balls are equal size and shape.
Add a little bit of coconut oil to thin out the chocolate if it is to thick and not coating smoothly.
Dipping the end of the stick in chocolate before attaching it to the ball and coating it in chocolate will help it not fall off the stick later.
- 1 Box Oatmeal Cream Pies (Little Debbie’s)
- 8 oz White Chocolate
- 12 Lollipop Sticks

Place all 12 cookies in a bowl and break them up with your hands really well. Until the the bowl is nothing except crumbs.

Using a tablespoon to pack crumbs and then roll them into a ball with your hands. then place the ball on a parchment lined baking sheet. Continue until the crumbs are all gone.

Melt 1 oz of white chocolate and dip the end of the lollipop sticks in chocolate then stick them in to a ball. place the balls in the the fridge for 15 minutes.

Melt the rest of the white chocolate and coat the cake balls quickly and return them to the parchment or in a cooling rack and stick the end of the lollipop stick in Styrofoam.

Sprinkle decorations on them if you like, Crumbs, Sprinkles, etc Let Chocolate coating dry completely store in an air tight container for up to 5 days.
