An Easy Greek Chicken Gyro recipe with tender, smokey and flavorful chicken and a delicious Tzatziki yogurt sauce served over crisp veggies and warm pita bread.
Its Grilling Season! Finally! This a perfect recipe for entertaining or a relaxing family meal on the deck. you can have everything ready a head of time, then just grill the chicken and let everyone fill their own flatbread when its ready.
The marinade for the chicken for this Greek Chicken Gyros is AMAZING that I use it even when I’m not making Greek Chicken Gyros. I am obsessed with this marinade it make the chicken so tender, flavorful and juicy. It is a thick paste style marinade that coats the chicken well and stays on it while you cook it and really infuses tons of flavor. I hope you enjoy this meal as much as I do. Greek style food is high on my favorite list right now, Especially with the season of fresh veggies and fresh flavors upon us.

For Chicken: Place the Marinade ingredients in a ziplock bag and massage to mix. Add the chicken into the ziplock bag and massage to cover all the chicken in the Marinade. Marinate for at least 1 hour, preferably 3 hours, ideally 8-12 hours and no longer than 24 hours.
For Tzatziki Sauce: Place grated and squeezed cucumber in a bowl. Add remaining ingredients then mix to combine. Set aside for at least 20 minutes for the flavors to mingle.
For Salad: Place all ingredients into a bowl and mix well.
Brush the outdoor grill with oil, then preheat on medium high. Or heat 1 tbsp of oil in a fry pan over medium high heat.
Remove chicken from Marinade. Cook the chicken for 2 to 3 minutes on each side, until golden brown and cooked through (cooking time depends on size of chicken)
Remove the chicken from the grill / fry pan onto a plate. Cover loosely with foil and allow to rest for 5 minutes before serving.
Get a pita bread or flatbread (preferably warmed) and place it on a piece of parchment (baking) paper (or you could use foil). Place some Salad down the middle of the bread, then top with chicken and Tzatziki.
