This Easy Chicken Pesto Stuffed Spaghetti Squash is taken simple healthy meal options to a whole new level. It is stuffed with chicken, pesto,veggies and melty cheese for a healthy meal.
I am so loving squash right now! You are able to flavor them so many ways it is like the perfect veggie! I love pasta but hate the guilt that is attached with it (seriouly who can only eat half of a cup). In comes spaghetti squash, it is my way to get that amazing pasta flavor without the guilt.
This easy chicken pesto stuffed spaghetti squash is so delicious and is freezer friendly. I tested it and froze 3 containers and reheated them for lunch later in the week and they turned out perfect! I just scooped the filling and the spaghetti squash out of the ‘shell’ and into the dishes, cooled, covered, and into the freezer. I did let them thaw completely overnight in the fridge before reheating them. I love having my freezer full of quick healthy meal options, it make my life a teeny bit easier. This is how I feel most of the time.
Easy Chicken Pesto Spaghetti Squash
Cut Squash in half lengthwise, scrap out seed from the middle. Drizzle olive oil and sprinkle with salt and pepper on the inside. Place face down on a baking sheet lined with parchment paper. Bake for 45 minutes at 400F.
In a large saute pan, drizzle a tbsp of olive oil, cook chicken, peppers, garlic and mushrooms. then stir in spinach and stir until wilted. stir in pesto and set aside off the heat.
Using a fork, fluff the spaghetti squash ‘noodles’ then fill the squash shells with the chicken mixture and sprinkle with cheese.
Cook at 425F for about 15 minutes or until cheese is melted and bubbly.
Scoop out of shells and in to bowls to serve. make sure to pull out the rest of the spaghetti squash.
Serve Immediately and Enjoy!!
