Hands down the Best Cauliflower Pizza recipe ever. In a few simple steps you can enjoy a low carb option to make you feel better about indulging in an all time favorite.
Recipe do over time! This is the best cauliflower pizza recipe has been a hit on my blog so I thought it was time to update it. Its is a great thin crust style pizza that has a great texture and can be picked up, held, folded and reheated. Still a favorite meal in our home.
So I take 1 Large head of Cauliflower and Chop it in to pieces and put it in the food processor and chop in to tiny bits.
Pour it in to a bowl and microwave it for 7 mins.
Let it cool on a clean kitchen towel for a few mins then squeeze out the excess juice. I get about somewhere between 1- 1 1/2 cups of juice.
Mix it up with 2 eggs and 2 cups of grated light mozzarella cheese.
Press into a pan lined with parchment paper (parchment is important! it will stick to other surfaces) shape into a pizza shape. Kinda press the edges up so it looks like a crust
bake at 425 F for about 20 minutes or golden brown in color.
take out of oven, top with whatever toppings you like. we used turkey pepperoni and cheese with a homemade pizza sauce I make based on this recipe from mymommystyle.com bake again for about 15 mins or until bubbly.
The Best Cauliflower Pizza Crust.
1 Large head of Cauliflower
2 cups of Shredded Mozzarella Cheese
Chop washed cauliflower in to small pieces, then place in food processor and blitz until its about the size of rice grains.
Put cauliflower in a bowl and microwave for 7 mins
Dump out on to dish towel and let cool for a bit then wrap in dish towel and squeeze out excess juice i get about a cup to a cup and a half per head.
In a larger bowl mix cauliflower with eggs and cheese. the press into pizza shape on a pan lined with parchment paper.
Bake in oven for about 20 minutes at 425F or until brown and crispy.
Take out and top with whatever pizza toppings you like then bake again until cheese is bubbly and brown.
