early to mid summer on this tiny island means many things. one of which is fresh strawberries. one of my favorite memories growing up was spending our days on the river at our cottage and finishing a long day of playing in the water or roaming around the wood to my mother calling us in for supper and that usually meant bbq’d something followed by this amazing fresh strawberry pie. now as a mother I look back on these moments and realize… I need to make that pie! so that’s exactly what I did. and as I took that delightful first bite it instantly made me think of that cottage and that river and my mother and what a nice memory it is.
Fresh Strawberry Pie
- Pie Crust ( i used frozen 8in pie shell)
- 4 cups of Fresh Stawberries (cleaned, hulled, and quartered)
- 3/4 cup of water
- 1 cup of white sugar
- 3 1/2 tbsp of cornstarch
bake and cool pie shell according to directions on box.
after strawberries are cleaned set aside 1 cup and mash them ( i used my hands). in a sauce pan mix sugar and and cornstarch. stir in the water and the mashed up berries and bring o a boil stir constantly. let cook while keep stirring for about 2-3 minutes ( or until the mixture starts to turn translucent) then take off heat and let cool for about 10 minutes.
after the glaze is a little cooler stir in the rest of the strawberries and immediately pour into cooled pie shell. chill for about 1-2 hours.
yields 6-8 servings ( really it should be just 1 serving… its that good)
