Fall is my favorite time of year I know it sound so cliche but it really is! I Love sweater and cool weather the colors, scarves, cute boots, warm coats and spices. Everything is reset and the colors change and the air smells fresher. Pumpkins are the best! I love almost everything from the squash family but a couple years ago white pumpkins caught my eye. I love them! they are a rustic autumn cream color and compliment the oranges and reds of autumn. I also love Pumpkin spiced anything. Pie Bread cookies and drinks. I decided I wanted to cook a white pumpkin and try it out.
The first step in trying to cook/bake with a white pumpkin is making the white pumpkin puree. This puree recipe obviously can be used for orange pumpkins as well. This is just your basic “how to make pumpkin puree” walk through.
Roasted White Pumpkin Puree
I used a large white pumpkin cut it in half and scraped out the seeds.
Then place it face down on a cookie sheet and baked it at 350F for about 2 hours. time is adjusted on size of pumpkin it is done when a knife goes through the flesh easily.
Then take out of the oven and let cool for a bit. Once you can handle it scrap the flesh out of the skin. This should be easily done. scoop the Flesh out into a bowl.
Then strain the excess water out using a strainer or cheese cloth.
After its strained put in food processor and run on high for 1-2 mins or until smooth and Voila! you have Fresh Pumpkin Puree.
