Flavorful turkey meatballs that are easy, healthy, and really filling!
Pasta is a staple in our house. Some kind of pasta is on the menu at least once a week. It is my weakness, my comfort food, and my lifeline somedays. When I get home after a busy day, exhausted, and have no meal ideas for the answer to the never ending question of “What’s for supper?” I almost immediately go to the pasta cupboard and then begin to try and create supper.
These Healthy Turkey Meatballs with Zucchini Pasta are super quick to make a meal out of. I make the turkey meatballs in a big batch so I have them in my freezer whenever I need them. The zucchini noodles can be made within minutes using simple kitchen tools (no zoodler required) I use a Julienne slicer that I picked up at y grocery store. - 1 pound Ground Turkey
- 1 Egg
- 3/4 cup Bread Crumbs (Gluten Free bread crumbs work great)
- 1/4 cup Marinara Sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp Oregano dried
- 2 tsp Basil dried
- 3 tbsp Milk Optional (Almond Milk works well)
- 4 medium Zucchinis Shredded in to noodle with julienne slicer
- 3 cups Pasta Sauce
- Parmesan cheese shredded (optional)
In a bowl, combine breadcrumbs, spices, egg, marinara sauce, and milk and mix well.
Add the turkey and mix well (works best with your hands)
Form meat into balls and place on a cookie sheet. makes 12 large meatballs or 20 small ones
Bake at 350 F for 15-20 minutes (this could be longer or shorter depending on the size of the meatballs).
If you have prepared sauce as well, place the meatballs in the sauce and simmer for 10 minutes (optional)
Prepare Zucchini noodle in a saute pan with 1 tbsp of oil or butter add in whatever other vegetable you like.
saute the noodle until slightly soft and the texture of spaghetti noodles remove from heat and serve immediately
top noodles with meatballs and sauce and a sprinkle of parmesan cheese
