I know another sheet pan dinner, right. I cant help it I am obsessed with how easy and delicious they are. I’ve said it before, Sheet pan dinners are more of a concept then a recipe. I basically choose protein + veggies + seasoning and toss it together on a pan and bake until done. This Sheet pan BBQ Chicken and Sweet Potatoes recipe is so easy and makes great weekly meal prep for lunches or a super quick weeknight meal.
The Smoky, Sweet, Spicy and Sticky Deliciousness of this sheet pan meal is bursting with flavor. Just toss the sweet potatoes in some olive oil and chipotle seasoning, bake in oven for 20 minutes then add the chicken and asparagus that have been tossed in the seasoning as well on the same pan (or separate pan if you are feeding a crowd.) Bake for 15 more minutes. Smoother the chicken in your favorite bbq sauce. Bake for a few more minutes or until the chicken is cooked through and veggies ate tender. See easy peasy.

Sheet Pan BBQ Chicken & Sweet Potatoes
Preheat oven to 400F, Line a sheet pan with parchment paper.
Place sweet potatoes in a large zip-lock bag or a large bowl, toss with 1 tbsp olive oil and 2 tbsp of southwest chipotle seasoning. Coat well and spread on sheet pan in a single layer.
Bake Sweet Potatoes in oven for 20 minutes. While potatoes cook coat chicken and asparagus with the rest of olive oil and the rest of the chipotle seasoning mix.
Place chicken and Asparagus on the same pan as the sweet potatoes after they have been in the oven for 20 minutes.
Place pan back in oven for 15 minutes, then pull out and brush BBQ sauce on the chicken breasts. Place back in the oven for another 5-7 minutes or until the temperature of the chicken reaches 170F.
Enjoy! Also makes great meal prep! Just divide in to reheat-able containers and store in the fridge.
