December is here! This whole month is going to be holiday orientated. For the next few week I have a line up of delicious holiday baking that will soon become some of your families favorite treats. First up this month is these crazy easy Red Velvet Cookie Bars with a super rich and creamy cream cheese frosting. These rich, chewy, thick, soft, velvety cookie bars are a perfect treat for family dinners, or any holiday gathering. Seriously, these ooey, gooey red velvet cookie bars are the perfect start to holiday baking. Quick and simple to put together and freeze well for your make ahead convenience.

Red Velvet Cookie Bars

Ingredients

Cookie Base
Cream Cheese Frosting
Instructions
  1. Preheat oven to 350 degrees. Line a 9×13 pan with parchment paper and spray lightly with cooking spray.
  2. In a medium bowl, Stir together flour, cocoa, salt, and baking powder. Set aside.
  3. In a mixing bowl, cream together 1 cup butter softened and sugar until light and creamy, with electric mixer. About 2-3 minutes. Beat in the eggs, vanilla, and food coloring until combined.
  4. Add the flour and mix until a soft dough forms. Press into the bottom of the 9×13 inch pan. Bake for about 20-25 minutes until the edges start to pull away from the sides and a toothpick entered into the center comes out clean. Allow to completely cool before frosting.
  5. To make the cream cheese frosting, Beat together the cream cheese and butter. Add the powdered sugar and vanilla. Beat together until smooth. Frost the top of the bars. Cut and enjoy!
