These Red Velvet Cheesecake Cookies are fantastic.
They are soft and delicious with a creamy cheesecake filling.

These cookies are a perfect sweet for many occasions. 

My Christmas Baking is almost done.. I think. My list of things to bake seems to get longer and longer. They are just so many yummy recipes and this time of year is always my excuse to make so many of them. But my freezer is full and there are only a few more days left until the big day, So soon, I hope to be done.

Back to the cookies, These wonderful cookies barley made it to the freezer. The whole batch almost was eaten before they were completely cool. They are made with soft and chewy red velvet sugar cookies topped with a cheesecake filling. They are just simply amazing little cookies.

Red Velvet Cheesecake Cookies

Ingredients

Instructions
  1. Preheat oven to 300ºF. Prepare a baking sheet by lining it with parchment paper.
  2. Beat together the butter, brown sugar, egg yolk, and vanilla until light and fluffy. Mix in the flour, food coloring, and cocoa powder until soft dough forms.
  3. Pinch about a tablespoon of the dough at a time roll into a ball then roll them in the white sugar before placing on the prepared baking sheet (about 2 inches apart). Use the back of a small spoon to make a small indentation in the cookie dough.
  4. Bake for 10 minutes. Meanwhile, make the filling: using an electric mixer or beat together the cream cheese, egg yolk, sugar, salt, and vanilla until smooth.
  5. After the first 10 minutes of baking, remove from the oven. Then use the back of a round teaspoon to deepen the indentation in the cookies. Spoon a teaspoonish of the filling into each indentation.
  6. Bake for an additional 12 minutes, until filling is set. Let the cookies cool completely before serving. Store in a air tight container and chilled.
