This Quick & Easy Chicken Noodle Soup recipe is a perfect winter comfort meal. It is such a good homemade one pot meal that makes plenty of leftovers for the days to come. Soup is one of my favorite things to make in the cooler months. I love the way aromas fill the house and make it feel so cozy as it simmers on the stove. There is something so calming and relaxing about a good bowl of homemade soup. Chicken noodle soup is so special in this way.
I love this recipe! For many reasons, It’s super easy, It’s reasonably healthy, Its a one pot meal that can be made quickly from fresh veggies and store bought chicken. Quick & Easy Chicken Noodle Soup
- 1 tbsp olive oil
- 1 cup Onion Chopped
- 1 cup Carrots peeled and chopped
- 1 cup Celery chopped
- 2 tbsp Minced Garlic
- 10 cups Chicken Broth
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 8 oz Pasta (Spaghetti broken into forths, or egg noodles)
- 2 cups Cooked Chicken (chopped) (store bought rotisserie works great)
- 1 tbsp Lemon Juice (optional but highly recommended)
- 2 tsp Salt
- 1/2 tsp Pepper
In a large stock pot or dutch oven heat oil oven medium heat. Add onion, celery, and carrots. Saute for a few minutes or until onions are soft. Add the garlic and cook for another 1-2 minutes.
Add the chicken broth, dried thyme and dried rosemary. Let simmer until vegetable a cooked to fork tender. about 5-8 minutes.
Add noodles and chopped chicken and let simmer for another 10 minutes. if liquid level is below the amount you want you can always add more chicken broth and adjust seasoning at the end.
Add the lemon juice and simmer for a minute or two. then taste to check seasonings add salt and pepper as needed.
