One-Pan Spinach Stuffed Chicken
For Spinach Stuffing
For Veggies and Pasta
  1. Mix together ingredients for spinach stuffing mixture. Set aside or put in a piping bag. Set aside 1/2 cup of filling for sauce.
  2. Cut a pocket into each chicken breast by sliding a small paring knife into the thickest part of the chicken.
  3. Fill the pocket of the chicken with the spinach mixture.
  4. Sprinkle the Italian seasoning and paprika on each of the chicken breast.
  5. Heat 1 tbsp of olive oil in a large skillet over medium heat. place chicken in pan and cook for about 8 minutes on each side or until the internal temp reaches 180F. Remove from pan and set aside.
  6. Add another 1 tbsp of olive oil to the pan and add asparagus to the pan. cook for 3-4 minutes and stir often while cooking.
  7. Add the reserved spinach mixture to the pan. thin out the mixture with the milk adding little bits at a time until its a thinner sauce.
  8. Add the pasta to the pan and toss to coat and heat through.
  9. Add chicken back to pan and stir.
  10. Take the pan off the heat. Serve immediately. Enjoy!
