Loaded Cauliflower Salad
head of cauilflower
(cut into bite size florets)
hard boiled egg whites
hard boiled egg
Dill, dried or fresh, chopped
salt and pepper
cooked bacon, chopped
Preheat oven to 400F. line a baking sheet with parchment paper and spread out cauliflower pieces in a single layer. Bake for 25 mins or until nicely roasted.
While cauliflower is roasting, mix greek yogurt, mustard, dill, chives, onion powder and salt and pepper together in a small bowl and set aside.
Once cauliflower is cooled slightly, stir in to the yogurt dressing. add onion, celery, bacon and hard boiled egg white. let chill in fridge for at least 30 minutes.
Garnish with the hard boiled egg and any leftover bacon and chives.
