Awesome twist on a summer classic, This Loaded Cauliflower Salad has tons of flavor and is a
great low carb substitute for creamy potato salad.
This salad is made from roasted cauliflower and all the classic ingredients from a traditional creamy potato salad. a lightened up version of the dressing made from greek yogurt instead of mayo, and the addition of bacon, you know because bacon is awesome.
I found this awesome golden colored cauliflower at the farmers market! when I saw it i knew i had to have it. It taste exactly like regular white cauliflower. but it buts gives such a nice pop of color.
