This salad is made from roasted cauliflower and all the classic ingredients from a traditional creamy potato salad. a lightened up version of the dressing made from greek yogurt instead of mayo, and the addition of bacon, you know because bacon is awesome.

I found this awesome golden colored cauliflower at the farmers market! when I saw it i knew i had to have it. It taste exactly like regular white cauliflower. but it buts gives such a nice pop of color.

Loaded Cauliflower Salad

Ingredients
Instructions
  1. Preheat oven to 400F. line a baking sheet with parchment paper and spread out cauliflower pieces in a single layer. Bake for 25 mins or until nicely roasted.
  2. While cauliflower is roasting, mix greek yogurt, mustard, dill, chives, onion powder and salt and pepper together in a small bowl and set aside.
  3. Once cauliflower is cooled slightly, stir in to the yogurt dressing. add onion, celery, bacon and hard boiled egg white. let chill in fridge for at least 30 minutes.
  4. Garnish with the hard boiled egg and any leftover bacon and chives.
  5. Enjoy!
