First day of school was today. My fiance started work today also. In my mind I always plan for this day as a beginning of new routines and organization, But today I relaxed and drank Pumpkin flavored coffee and enjoyed the quiet. I planned to get so many things done today. Instead I just binge watched Gilmore Girls and began to plan for the busy months ahead. So to all the other busy moms out there take a minute to relax and enjoy the quiet when you get a chance.

Pumpkin flavored anything has had a bad reputation lately but I don’t care. As ‘Basic’ as it may sound I have always loved Pumpkin spice lattes, smoothies and pies. The list goes on. So let be real for a moment. Pumpkin Spice is delicious, Coffee is my lifeline and the two of them together just creates magic. sorry not sorry. Enjoy all things pumpkin this fall and do not apologize for it. Healthy Pumpkin Spice Coffee Creamer

Ingredients

Instructions
  1. Whisk Together the pumpkin, cinnamon, nutmeg, and ginger in a small saucepan.
  2. Add almond milk and maple syrup. stir well and heat slowly on a medium heat. bring to a simmer cook for 5 minutes stir constantly.
  3. Stir in maple syrup and vanilla. remove from heat. Cool Completely.
  4. Store in an airtight jar in the fridge for 5-7 days. Shake well before using as some of the spices may settle to the bottom.
