  • Creamy Roasted Red Pepper Pasta

Healthy Creamy Roasted Red Pepper Pasta seasoned with fresh Parmesan and basil makes this an amazing meal. This recipe is silky smooth, luscious, healthy and absolutely addicting.This is not a hard recipe to execute. 30 minutes and this recipe is done, so quick, even quicker if you use jarred roasted red peppers instead of roasting your own.

It’s rich, creamy, and so decadent! Surprisingly healthy.

Almost everything tastes better coated in this incredible sauce. Including but not limited to: Chicken, pork, fish, pasta, rice, or vegetables for example. If you’re taking advantage of these amazing vegetable transformations — zucchini pasta or cauliflower rice. (These are my jam right now.) The stock and fat free cream cheese and skim milk really lighten up this recipe without sacrificing the creamy texture or any of the flavor.

Creamy Roasted Red Pepper Pasta

Ingredients 

  • Instructions
    1. Set oven to broil to roast the peppers. Place quarters skin side up on a foil lined baking sheet. Place under the broiler for about 10-15 minutes or until skins are blackened all around. Remove from the oven and place peppers in a bowl covered with plastic wrap for 10 minutes. Remove the skins (they should slip right off). Chop.
    2. Cook pasta according to package directions.
    3. In a pot or large skillet, cook onions and garlic in olive oil until soft. Add roasted peppers, stir, heat through. Carefully transfer the contents of the pan to a blender or food processor and puree.
    4. In the same pan, over medium heat, pour the red pepper puree back into the pan. Add broth, cream cheese, and a pinch of salt and pepper. Stir to combine, Add milk as needed to thin out the sauce.
    5. Remove pan from heat and stir in Parmesan cheese and parsley. Add the pasta in sections and gently toss to coat. and serve immediately.
