Tender chunks of chicken and cauliflower in a creamy spicy tomato sauce served on rice with soft chewy naan bread. Indian cuisine is one of my favorite. Its warm blends of spices makes the whole house smell cozy and make a perfect comfort food in the fall and winter months. The spice level depends on your own preference really, we prefer the milder spectrum while some like it a lot spicier. If you like a little more heat increase the garam masala and add a couple hot peppers to the onions while sauteing.

Ingredients
Chicken Marinade
For Sauce
Instructions
  1. Combine all ingredients for marinade, let sit for at least 30 minutes or overnight is best.
  2. Heat olive oil in a large deep skillet over med-high heat, add marinated chicken to the skillet and saute chicken until almost cooked through, about 5 minutes.
  3. Reduce heat to medium, Add onions and garlic cook until onions are transparent. Then add in the crushed tomatoes and stir.
  4. Bring to a simmer and add spices (garam marsala, tumeric, cumin, ginger and sugar). stir to combine.
  5. Add cauliflower and let sauce simmer with chicken in it for about 20 minutes.
  6. Stir in Coconut milk and Greek yogurt
  7. let simmer for another 5 minutes.
  8. Serve over Basmati Rice or brown rice and/ or Naan bread.
