Easy Oreo Truffles
  1. Place the oreos in a food processor and pulse until the crumbs are very fine and all the large chunks are gone.
  2. Transfer crumbs to the bowl of a stand mixer and mix in softened cream cheese. Mix very well.
  3. Take a tablespoon size piece of the mixture ans roll into a ball and place on a cookie sheet lined with parchment paper. Roll the entire mixture in to balls. ( I got about 30 balls)
  4. Cool in refrigerator for about 30 minutes.
  5. Melt chocolate with coconut oil in the microwave 40 seconds at a time. stirring every 40 seconds until completely melted.
  6. Dip Oreo balls into melted chocolate using a fork or toothpick, then place the balls back on the parchment.
  7. When all the balls are dipped place back in fridge until chocolate is set.
  8. Store balls in the fridge or the freezer in an airtight container.
