I love take out/fake outs, I love taking some of our favorite restaurant dishes and making them somewhat healthier. In this delicious easy Mongolian beef recipe I opted for lightly pan frying the beef, instead of deep frying and cutting the sugar way down. Some helpful ideas to make this even quicker and easier for a weeknight meal made in minutes with very little effort. ~ Prep the sauce mixture (minus the cornstarch) the night before. ~ Slice the beef a head of time and have it ready to go. ~ cook the rice or noodle earlier in the day or even the night before.~ Chop the veggies you want to use the day before as well. All of these things will make your meal prep so much easier, I promise!
This recipe re-heats so well and is great for all the meal preppers out there, for quick healthy lunches or easy suppers for the week. You can use any vegetables you want as a side. We love broccoli and asparagus so that’s what I used this time. (P.S. this recipe make a surprising amount of sauce, so you can toss your veggies in it as well if you like.) Easy Mongolian Beef
- 1-2 lbs Beef Steak Sliced thinly against the grain
- 1/4 cup cornstarch
- 2 tbsp olive oil
- 1/4 tsp salt and pepper
- 4 cloves garlic minced
- 1/2 tsp Ginger minced or dry
- 1 tsp Sesame Oil
- 1/4 cup water
- 1/2 cup Low Sodium Soy Sauce
- 1/3 cup brown sugar
- 1 tsp Rice Vinegar optional
- 1/2 tsp red pepper flakes optional
- 2 Green Onions sliced
Heat sesame oil, garlic and ginger in a saucepan over medium heat. Add soy sauce, water brown sugar, vinegar, and red pepper flakes. Let boil for 10-12 minutes until it thickens slightly.
Toss the beef strips in cornstarch (I used a large ziplock bag, sealed it and shake until coated.) Shake off any excess cornstarch.
While sauce boils, Heat a large skillet over medium to high heat. Add 1 tbsp of olive oil. Add beef in small batches cook until brown, about 2 minutes. remove from pan and set aside on a paper towel. Repeat until all the beef is cooked. Beef doesn’t have to cook all the way through. it will finish cooking later in sauce.
Return all the beef to the pan and pour in the thickened sauce and toss to coat evenly.
Add green onions and stir. Serve with veggies and steamed rice or noodles.
