Easy healthy dinners like this were made for busy weeknight meals! This Chicken, Sweet Potato & Broccoli Bake is a concept recipe will quickly become a new favorite! It’s so easy to prep, clean up is simple and you will love it!
This is a healthy dinner that you can feel great about eating and it has such a incredible blend of flavors and textures. As soon as I took one bite I knew I was obsessed with this meal! We eat a lot of chicken so I love meals like this that are so different and easy to switch things up a little. Of course what I really love here is the simple concept – one pan. chop it, toss it, bake it, serve it.
Here’s the concept: Fill a pans up with good fresh ingredients – any veggies you like, add some kind of protien, toss with olive oil and good spices, bake for a while in the oven, serve heaping helpings for dinner or pack into containers for easy lunches all week. Easy Peasy. This is truly my favorite meal at the moment. For real.

Chicken, Sweet Potato & Broccoli Bake
- 1 pound Skinless Boneless Chicken Breast Cut into large chunks
- 2 medium Sweet Potatoes (Peeled & cut into 1/4 inch cubes)
- 4 cups Broccoli Florets
- 2 Red Pepper large slices
- 1/2 small red onion sliced
- 1/4 cup olive oil
- 3 tbsp garlic minced
- 1 tbsp Italian Seasoning
- 1/4 tsp Salt
- 1/4 tsp Pepper
- Sprinkle of goat cheese to taste
Preheat Oven to 425F, Mix olive oil, garlic, Italian seasoning, salt and pepper together in a small bowl.
Chop veggies and chicken, place in a large bowl and drizzle oil mixture over everything and toss to coat all the chicken and veggies well.
Dump the bowl in a pan sprayed with non stick cooking spray.
Place in preheated oven and cook for 40 minutes.
Serve immediately and Enjoy!
