This pizza is so crazy good with the bubbly garlic-y mozzarella, tangy goat cheese, sweet roasted peppers and sticky balsamic reduction gives this pizza a delicious Mediterranean flare to it.
Hey Guys! I hope your week is going just wonderful. Mine is going great, Insane but great. Moving and packing are no fun at all but the end is in sight. I am so in love with our new house and am super excited to get unpacked and semi organized. Soon life will get back to our so called normal. Till then we will eat pizza and empty boxes for this week. Next week I will get back to running, yoga and vegetables. Hopefully.

Chicken & Roasted Red Pepper Pizza
Mix warm water, honey, and yeast in a mixing bowl and let sit until its foamy, about 10 minutes.
Add oil, flour and yeast and mix until it forms a ball.
Knead dough on floured surface for about 5 minutes, until its smooth and elastic. add little bit of four to avoid sticking.
Spray a large bowl with non-stick spray. place ball of dough in the ball cover with plastic wrap and let sit rise about 1 hour or until it double in size.
after it rises, preheat oven to 500F. Roll out dough to whatever shape you want your pizza.
Make Glaze by mixing brown sugar and balsamic vinegar in a small saucepan. Bring to a boil and reduce heat and let simmer until the mixture is reduced by half and thickened this takes about 10-15 minutes.
Brush rolled out pizza dough with garlic butter. Top with grated mozzarella cheese. sprinkle chicken, roasted red peppers, basil and goat cheese.
bake in 500F oven on a pan lined with parchment paper for about 15 minutes or until the edges are golden brown and cheese is bubbly.
