These Caramel Stuffed Cookie Bars are amazing! I mean how could they not be amazing. They are stuffed full with all the best things! Soft chewy peanut butter chocolate chip cookies as a crust on the top and bottom. With an incredible creamy caramel filling. You will not be able to stop eating them and will be fighting over the last crumb.
These Caramel Stuffed Cookie Bars are seriously incredible! They are so satisfying and the texture is perfect. Soft and chewy cookies, the caramel-y filling stays put in the center of the bars. Perfect for anytime, really. go make them right now. seriously. now. They beg to be eaten in tiny bite sized pieces or huge chunks. Seriously I dare you to try not to eat them. Thank me later. This caramel is so crazy good. The cookies is just the vehicle to get the caramel to my mouth. so-freakin-good.

Caramel Stuffed Cookies Bars
Preheat oven to 350 degrees. Grease a 9×13 baking dish or pan.
Unwrap caramels and place in a small saucepan with butter and sweetened condensed milk. Cook over medium-low heat, stir constantly, until caramels have fully melted and the mixture is nice and smooth. set aside.
Cream butter and sugar together in a large mixing bowl. Add peanut butter and continue mixing. Add eggs, one at a time, mixing well after each egg. Then stir in vanilla.
Combine flour, baking powder, and salt in a small mixing bowl. Add the flour mixture slowly stirring until well combined. Stir in the chocolate chips, and peanut butter chips.
Spread ⅔ of the dough on the bottom of the pan. Slowly pour caramel mixture evenly over the dough. Drop the remaining dough on top by the teaspoon. It doesn’t have to be perfect!
Bake for about 35 minutes. Let cool completely and then cut into bars.
