Lasagna is one of the first meals I learned to make when i was a kid. My mom would let me, as an eager 10 year old, completely destroy her kitchen while trying out new versions of this dish.It has been one of my favorite meals to make since then. I remember my friends coming home with me for lunch break in high school to enjoy my leftover lasagna. I have been playing around with recipes ever since.

This easy Healthy Turkey Lasagna Recipe is really simple to make and it tastes great! Without sacrificing the amazing ricotta cheese (I used a fat free ricotta) and mozzarella cheese (a reduced fat shredded mozzarella), and also by making a few healthier substitutions. By using prepared marinara sauce in a jar I was able to shave some time and effort off the preparation, which I always appreciate time savers. with the extra veggies and lean turkey its so good for you, and truly tasted just as good as traditional lasagna noodles. This low calorie turkey lasagna recipe is a healthy dinner that the whole family will enjoy.
Healthy Turkey Lasagna
- 9 Lasagna noodles
- 1 pound Lean Ground Turkey
- 2 cloves garlic Minced
- 1 Tbsp Italian Seasoning
- 1 Jar Pasta Sauce (Light or reduced sugar) (24 ounces)
- 1 1/2 Cups Spinach Fresh or Frozen (chopped)
- 1/2 Cup Mushrooms Sliced Thinly
- 2 cups Part skimmed or Fat free Ricotta cheese
- 2 cups Part Skim (reduced fat) Mozzarella Shredded
Preheat oven to 375 degrees. Lightly coat a 9×13 inch baking dish with nonstick cooking spray and set
Cook lasagna noodles according to box directions. Drain noodles and rinse with cold water
Lightly coat a large, deep skillet with nonstick cooking spray Add turkey and garlic and cook until turkey is browned, about 5 minutes. Add mushrooms and cook 5 more minutes
Add pasta sauce, Italian seasoning and pepper, simmer for 2 minutes. Remove from heat.
In a bowl, combine chopped spinach, Ricotta and 1/2 cup of the mozzarella
In your baking dish, arrange ⅓ of noodles (3) in bottom of dish. Spread ⅓ of ricotta mixture, ⅓ turkey mixture and ⅓ of the mozzarella. Repeat 2x, ending with mozzarella.
Bake for 25 minutes or until cheese becomes bubbly. Sprinkle parsley on top. Cool for 5 minutes before cutting.Serve immediately and enjoy with tossed salad or whatever you want.
