As a rule I use about 1 medium sweet potato per person. but trust me that will make more than enough sweet potato fries. No one will complain that you have too many of these crispy flavor packed morsels of goodness kicking around. The cornstarch and oil create a crispy coating and the light seasoning just add so much to these delicious baked fries that you will soon be wanting more.
Crispy Delicious Sweet potato fries make a great side dish or snack almost anytime. They are a great alternative to greasy take out deep fried fries. and the amount of oil and the kind of oil you uses is also optional. which means these can be easily be made for clean eating, gluten free, vegan or low fat diets. this is a great easy side dish perfect for anytime meals.
- Crispy Sweet Potato Fries
- Serves 4 | Prep 10 minutes | Cook 40 minutes
- 2-3 medium Sweet Potatoes
- 3 tbsp cornstarch
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cayenne pepper more if you like heat
- 1 tbsp olive oil
- 1/2 cup Greek Yogurt or mayonaise
- 1 tsp Sriracha
- 1 tbsp honey
- 1/4 tsp cayenne pepper
Peel the sweet potatoes and slice them in to 1/2 inch sticks.
Soak the sweet potato sticks in cold water for about an hour.
While poatoes are soaking, Preheat oven to 400F and mix cornstarch, and spices together in a small bowl.
Drain the potatoes and toss them in the cornstarch mixture until lightly coated.
Place in a single layer on a baking sheet and drizzle with olive oil.
Bake for 15 minutes then using a spatula toss them over and bake for 15 more minutes. turn oven off and let them sit in there for 10 more minutes. for extra crispiness.
For Sweet and Spicy dip: Mix the Greek yogurt, sriracha, honey and cayenne pepper. serve with sweet potato fries.
